boil 2 lbs of MASHING POTATOES and set aside. melt 2 tbsp of GHEE in a skillet. add 1 tsp of CUMIN SEEDS and 1 tsp of MUSTARD SEEDS carefully stirring until they pop. add a MINCED ONION and 2 tbsp minced, FRESH GINGER. cook until the onions are very soft, then add in 1/2 of PEAS, stirring 'til warm. remove from heat and smoosh in the potatoes, 3/4 tsp of GARAM MASALA and splash of MILK...so good!
