this super simple soup is great for vata digestion which can sometimes need help from fermented foods like miso.
soften a diced ONION in some GHEE for about 10 mins. add a thumb of sliced GINGER, cooking a few more minutes. then, add 6 to 8 c of any BROTH, about 3 c of any cooked WINTER SQUASH like acorn or butternut and 3 to 4 tbsps of MISO. simmer a few minutes and then puree and serve.
any WINTER SQUASH is grounding and moisturizing while the ONION and GINGER help keep the body warm. vata is the only dosha that can really benefit from fermented foods because the MISO supports it’s cooler, drier digestion.
