this TOFU SALAD is a cooling source of protein unlike many animal products, making it superior for SUMMER / PITTA. this recipe is a mash up of many i found online omitting overly spicy or heating stuff.
cube a 14-ish oz block of tofu into half-inch pieces. then, whisk 4 tbsp of TAMARI or COCONUT AMINOS, 2 tbsp of MAPLE SYRUP and 2 tsp of SESAME OIL and use it to gently dress the tofu. you could sprinkle with SESAME SEEDS if you have some on hand.
TOFU is TRI-DOSHIC but especially good for pitta / summer. of course, we avoid it if there are hormonal imbalances of the estrogen type. the MAPLE cools and grounds and the SESAME in any form soothes irritated summer skin. the COCONUT AMINOS have far less sodium than TAMARI but if you’re having it in moderation, you should be okay.
