i LOVE this one from 101 COOKBOOKS! i only omitted the toppings — the peanuts and sesame seeds — so its less heating for PITTA / SUMMER.
mandoline or thinly slice 2 c of CABBAGE, 4ish CELERY stalks and 1/2 a c of BROCCOLI. you could add 1/2 a c of MUNG BEAN SPROUTS too. toss in the dressing: whisk 2 tbsps of TAMARI, 1 tbsp of RICE VINEGAR, 1 tbsp of HONEY, mix 2 tsp of SUNFLOWER OIL, 1/2 tsp of SESAME OIL. garnish with a bunch of chopped CILANTRO.
the CABBAGE and BROCCOLI are very cleansing for blood and liver as well as astringent which is great for pitta’s excess fluid. CELERY can calm heated, agitated nerves. the MUNG BEAN SPROUTS are detoxifying and good for all things acidic and CILANTRO cools acidity too. SUNFLOWER OIL is slightly cooling and SESAME OIL strengthens all the layers of our skin. the HONEY, RICE VINEGAR and TAMARI can all be a tad heating but in such small amounts and with all the other cooling going on here, i wouldn't worry about it.
