hacked this RAMEN w/ MISO PESTO from HEALTHYISH for KAPHA SEASON & KAPHA PEOPLE and it was pretty delicious!
i swapped the BUTTER for GHEE since it's so much easier to digest. believe it or not, GHEE is actually detoxifying, unlike BUTTER which can clog the channels. i also used SUNFLOWER OIL instead of GRAPE SEED and swapped the SPINACH for ARUGULA since the oxalic acid in raw spinach can be inflaming for some people, especially pitta dominant people like me. cooked spinach is okay though...happy hacking!
for noodles, cook 2 x 5-oz. packages fresh ramen noodles according to instructions. toss in 1 tbsp of GHEE after straining. then, puree 4 cups of ARUGULA, 2 cups of CILANTRO, 1 tbsp of MISO, 1 clove of GARLIC, 1/2 a cup of SUNFLOWER OIL, 1 tsp of SESAME OIL, and 1 TSP of LEMON JUICE until smooth. toss all together and enjoy!
